CHEF DAVE METZ

Chef Dave, born and raised in Phoenix, AZ, found his passion for food while cooking for an old roommate with multiple dietary restrictions. The thought of creating a variety of flavorful meals to meet his friend’s diet presented a challenge much more exciting than Dave’s then-career in radio and concert production. Eventually, Dave sold his car and bought the ever-romantic one-way ticket to New York City to follow his new passion.

Since arriving in New York 15 years ago, Dave’s career has seen him cooking in all sorts of kitchens, from Michelin-starred kitchens to tented backyards and venues from Manhattan to Costa Rica and back again - but a few experiences stand out. His time spent with Tom Colocchio’s Crafted Hospitality breaking down whole animals for the in-house charcuterie program introduced Dave to the beauty of nose-to-tail cooking. At Rebelle (1 Michelin Star), Dave learned the ins and outs of modern French fine dining. Most recently, at New York City’s Italian-inspired Delicious Hospitality Group as Director of Culinary, Chef Dave took on multi-site management, more than a few openings, and acted as the culinary lead for research and development with JetBlue airlines Mint 2.0 program.
